A Soul-Warming Himalayan Dish

Popular in the mountains of Nepal, Thukpa is a wholesome noodle soup with vegetables and a rich, spicy broth.

  • Boil noodles and keep aside.

  • In a pan, sauté onion, ginger-garlic paste, and chili. Add tomato and cook until soft.

  • Add veggies, soy sauce, salt, and pepper. Cook until tender.

  • Add 2 cups of water or broth. Let it simmer.

  • Add noodles and garnish with coriander.
