A Soul-Warming Himalayan Dish
Popular in the mountains of Nepal, Thukpa is a wholesome noodle soup with vegetables and a rich, spicy broth.
Ingredients:
- 1 cup noodles (egg or rice)
- 1 onion, sliced
- 1 tomato, chopped
- 1 carrot, julienned
- 1 cup cabbage, shredded
- 1 tsp ginger-garlic paste
- 1 green chili, chopped
- 1 tsp soy sauce
- Salt & pepper
- 1 tbsp oil
- Fresh coriander

Instructions:
Boil noodles and keep aside.
In a pan, sauté onion, ginger-garlic paste, and chili. Add tomato and cook until soft.
Add veggies, soy sauce, salt, and pepper. Cook until tender.
Add 2 cups of water or broth. Let it simmer.
Add noodles and garnish with coriander.
